Kimble's Cookbook: Tailgate Foods

Here at Kimble's there are many things that we enjoy, one of these being cooking delicious food for our customers. We felt like it wouldn't be right to keep all of this goodness to ourselves. In 2018, the Kimble's crew teamed up with the United Way of West Georgia, Inc. to publish "Cooking With Kimble's Food By Design: Good People Sharing Good Food!" This was a way for us to begin sharing some of our best recipes with one another, and now we want to share with you! Kimble’s is starting a Kimble’s Cookbook series where we let you guys in on some of our most delicious secrets. We hope you enjoy Kimble’s Cookbook as much as we do!


Since football season is now in full swing, we thought it would be a good idea to share some of our best tailgate food recipes with you. Today we will share all of our secrets to great Jalapeño Poppers, Sirloin Bites, and our brand new Rattlesnake Bites.



Jalapeño Poppers

8 Jalapenos, Sliced in Half Lengthwise and Deseeded

16 oz Cream Cheese

16 Slices of Bacon

Toothpicks


Heat grill to 300 degrees. Rinse sliced jalapenos to remove all seeds. Fill each jalapeno with cream cheese. Use one slice of bacon and cover each cream filled slice. Use toothpicks to secure the bacon in place. Add wrapped jalapenos to the grill. Allow to cook approximately 25 minutes or until bacon is cooked to desired crispiness. Rotate poppers at least once to allow even cooking. Enjoy!



Sirloin Bites

8oz Sirloin, Cut Into 1 1/2 - 2 Inch Pieces

1 Tablespoon of Steak Seasoning

2 Tablespoons of Olive Oil

1 lb of Bacon, Sliced Into Thirds

1/4 Cup of Balsamic Reduction

2 oz of Gorgonzola Cheese


Rinse the Sirloin, pat dry and cut into bite size pieces. Toss pieces in steak seasoning and set aside. Preheat a skillet on medium high heat and add the oil. Add the seasoned sirloin pieces to the skillet and cook enough to sear the sides. Remove from the skillet and cool. Wrap each sirloin piece in bacon and secure with a bamboo skewer. Place wrapped sirloin pieces on a sheet pan and bake at 350 degrees until the bacon is done. Let the bites cool and garnish with gorgonzola cheese and balsamic reduction and serve.


Brand New Rattlesnake Bites

Boneless Chicken Breasts, Cut Into 1 1/2 - 2 Inch Pieces

1 lb of Bacon, Sliced Into Thirds

Salt

Pepper

Granular Garlic

Liquid Smoke

Onion Powder

1 Bag of Light Brown Sugar

1/2-1 Cup of Chili Powder


Preheat oven to 350 degrees. Cut chicken into bite size pieces and bacon into thirds. Soak chicken pieces in mixture of salt, pepper, granular garlic, liquid smoke, and onion powder. Let sit for 2 hours. In a bowl mix light brown sugar and cayenne pepper. Roll chicken pieces in the mixture then wrap in bacon. After wrapping in bacon, roll pieces in mixture again. Place pieces on a wire rack on a pan. Bake for 15-20 minutes or until the bacon is done. Plate and serve.
